Rosso pecorino or simply Rosso is a semi-matured pecorino cheese coated with Senise red chilli peppers that gives it a reddish-orange crust. This artisan cheese made by Casa Madaio is smooth in texture with rich, spicy flavour.  The maturation period is about 6 months.
