Pecorino Camomilla
Pecorino Camomilla is an Italian cheese made with pasteurized sheep's milk. It is produced in May and June when sheep graze on the best grass. It is covered with chamomile flowers and kept in wooden crates and then left for maturation over 60 days. The wheels are stored under the arches in the afternoon to protect from high heat. This keeps the cheese soft and gives it an intense floral aroma.
