Blue Earth is a Brie-style cheese made by financial-service-man-turned-cheese-maker, Keith Adams of Alemar Cheese Company. It is a pasteurized cow's milk cheese with a bright, grassy, buttery flavour profile that is a reflection of the fertile soils that dominate the Blue Earth County. Blue Earth boasts of a rich, luxuriously smooth paste enveloped by a snowy-white rind that can pair extremely with a green salad, slices of baguette and even berries or chocolate.
