Melinda Mae is a soft-ripened, Robiolo-style cow's milk cheese from The Mystic Cheese Company. Made with pasteurized milk, the bloomy rinded cheese is ripened exactly for 11 days. The result is an ivory-coloured, smooth silky rippled paste enveloped by delicate and pillowy gauze of white mould. The soft oozing paste has a fruity fragrance with musty forest floor mist. As the cheese matures, it becomes pungent and piquant, moving onto subtle sweet and savoury notes. Pair it with fruits, light honey and roasted nuts. Oaky whites, light hearted red and malty brews are the perfect accompaniments to this champion cheese.
