Hidden Springs Farmstead Feta
Hidden Springs Farmstead Feta is a typical sheep's milk farmstead Feta but lighter and less salty that classic Feta's. It is produced by Hidden Springs Company in Wisconsin, USA. With a creamy, fluffy texture, it can be called a combination of feta and cottage cheese. The cheese was made at the insistence of Chef Jack Kaestner of the Oconomowoc Club for use at his restaurant.
