Chocolate Lab is a hard, aged cow's milk cheese with a dusty red colour patterned rind that is washed every other day by hand with a brine solution. This gives the cheese an intense and pungent flavour along with a firm interior. When ready, the wheels are hand rubbed with a with a mixture of sea salt and crushed cocoa nibs from French Broad Chocolates to render a rich and rugged finish to the rind. Chocolate Lab pairs well with a Chocolate Stout Beer or Malbec Wine.
