Named after the two most popular southern Utah canyons, Dark and Snow Canyon Edams refer to the same cheese, but at different ageing periods. The cheeses are made from raw cow's milk by Rockhill Creamery, a farmstead cheese company located in the town of Richmond.
Dark Canyon is a semi-hard cheese aged between 2 and 4 months. It has a rich and creamy flavour that is fairly mild. The cheese is delicious on its own but goes excellent on a burger.
When Dark Canyon is aged for more than ten months (usually sold at 12 to 17 months), it is called Snow Canyon. It is a much harder, drier cheese than Dark Canyon with a gorgeous white rind and a crumbly and slightly granular texture. It exhibits a sharp tang with notes of butter, milk, hay and grass.
