What is Estero Gold Reserve Cheese?
Estero Gold Reserve is an Italian-style cheese made from raw Jersey cow’s milk in California, USA. Inspired by traditional Swiss-Italian alpine cheeses, it is the same as Estero Gold (aged for about six months) but is aged for a minimum of 16 months. With extended aging, it develops a deeper, stronger flavor and a crystalline, hard, and dry texture, similar to Parmesan. It is an excellent cheese for grating and pairs well with a glass of red wine.
Estero Gold (aged for about six months) has a smooth, firm texture with a slightly nutty and grassy flavor, complemented by mild, buttery notes.
