Herbs de Humboldt is a goat's milk cheese delivered by Cypress Grove Chevre, of Arcata, California, in Humboldt County. As the name suggests, it is hand-blended with a mix of Herbs de Provence to create a classic, herbal flavoured fresh cheese. Crumble atop homemade pizza or spoon into a fresh fig, wrap with a single slice of bacon and secure with a toothpick.
It pairs well with Chili Beer, Red Ale and wines such as Sauvignon Blanc, Pinot Grigio.
The cheese won first place at the ACS 2001, 2002, 2004, 2005, 2009, second place at U.S. Cheese Championships 2005 and Silver at World Cheese Awards 2014.
