Produced by Meadow Creek Dairy in the small town of Galax, Virginia, Mountaineer is artisanal, washed rind cheese made using raw milk from their own herd of Jersey cows. It is a European style cheese aged for at least 6 months. The texture is delicate, supple and melt-on-the-tongue while the taste is reminiscent of fruits with a rich beefy finish. As it melts beautifully, it could be used with figs or toasted hazelnuts. The cheese pairs well with a Viognier or apple and pear ciders.
